Quinoa Quest: Breakfast Muffins

Ham & Cheese Quinoa Breakfast Muffins

My sister was introduced to Iowa Girl Eats by an co-worker not too long ago.  She was very quick to let me know because she knew I was on a Quest to find delicious Quinoa options.  This girl has a ton, and I can't even begin to express how excited I am to try her recipes.  The first on my list is the Ham & Cheese Quinoa Breakfast Muffins.

Theses were so easy to make and they are going to be even easier in the morning! Great breakfast for Andrew to grab in the morning on his way to work.
 
1. Shred zucchini and sharp cheddar cheese, and slice ham. Combine into a bowl with 2 eggs and 2 egg whites. (I did extra for a bigger batch.)

2. Spray pan with non-stick spray and scoop mixture into cupcake spots.

3. Bake for at 350 for 25-30 minutes if you are going to use a standard cupcake pan.

4. Removed once they are browned around the edges. 

5. Serve, or put in plastic baggies for an On-The-Go Breakfast! Microwave when ready to eat.

Quinoa Quest: Quinoa Roasted Strawberry Parfait


I am constantly looking for great Quinoa Recipes, when I stumbled upon Baked Bree who recently posted about roasted strawberries.  While her blog was about strawberries, she photographed these adorable and delicious looking little parfaits.  It was Quinoa and Greek Yogurt topped with her roasted strawberries.  I had to try these and the best part was they looked so simple and quick.  Find her recipe here

1. Rinse


2. Cut

 
3. Place in a oven safe dish. 


4. Drizzle with sugar and balsamic vinegar.   By the way look at those cool magnetic measuring spoons above my mom just got me (From Crate & Barrel)


5. Roast in the oven at 375 for 10-15 minutes


 6. Build the Parfait.  Quinoa, Greek yogurt, Roasted Strawberries. Enjoy!

Quinoa Quest: Quinoa Duo


I recently found the Trader Joe's Quinoa Duo with Vegetable Melange in Trader Joe's frozen section.  This is a quick and easy, microwave in 7 minutes side dish that is ready to go at any time.   The vegetables, herbs, and spices take this plain and nutty grain and give it so much flavor and makes me wanting more! I never thought quinoa would ever do that to me!


Microwave Directions: 

1. Place in a microwavable dish. 


2. Microwave for 3 min covered. Stir. Microwave for 4 minutes. 


3. Eat!!

Quinoa Quest: Fried 'Quinoa' Rice


Ok, I have not been a huge fan of Quinoa, but the nutritional facts have me on a quest to make this not so favorite complex carbohydrate a regular in my meals.

First try, Fried 'Quinoa' Rice!

Fried 'Quinoa' Rice
Serves 2

Ingredients:
2 cups cooked quinoa
1 tablespoon olive oil
Soy sauce
2 eggs
Garlic Salt
Pepper

Optional:
Cooked Protein (chicken, steak, shrimp)
Cooked Veggies (zucchini, peppers, onions, peas, carrots, corn)
Nuts (Cashews, peanuts)

1. Heat olive oil in a pan.

2. Add the 2 cups cook quinoa to the pan and cook for 2-3 minutes moving the quinoa around.


3. Create a crater in the pan with the quinoa.


4. Crack the 2 eggs in the middle, scramble and cook.


5. Once the egg is fully cooked, top with soy sauce, garlic salt, and pepper to taste.


6. Stir in any of the optional ingredients. 


My favorite combination is chicken, zucchini, and peanut fried 'quinoa' rice.
